Freezing The Harvest

Even though this year’s garden isn’t how I wanted it to be, I’m still pleased with how it turned out.

So far harvests have been small. Most days there are a few tomatoes to pick. Some days there are a couple of cucumbers or squash.

For the first time though, I’ve grown enough to use the veggies as a side dish for dinner and snacks throughout the day.

Today I did something I’ve never done before. There was actually enough crooked-neck squash to put some in the freezer to save for later. I’ve never done this before.

I looked it up online, sliced a couple up, blanched them for three minutes, tossed them in an ice bath and packaged them up. It was so exciting to put the bag in the freezer knowing that sometime when there are no longer fresh veggies coming out of the garden, we will still be able to enjoy them.

Tonight, my husband cooked dinner. He makes this lemon chicken and asparagus dish that is pretty good. We’d bought asparagus at the store a few days ago, but when he pulled it out, it had already gone bad.

He was so upset and almost gave up on dinner until I reminded him that we had the squash he could use in the refrigerator. Not only did it save us a trip into town to pick up more veggies, we had some that are completely organic.
