My Harvest Today Saved Me $11.28

Gardening is not the easiest thing to do, but for me it is so completely worth it.

This morning I wanted to get outside and see what I could harvest before the heatwave made it unbearable. There wasn’t much, and not a whole lot that goes together, but anything is better than nothing, right?

I was a bit disappointed as I brought my goodies inside. 1 tomato, 3 cucumbers, a 2lb yellow squash, 2 cups of blueberries. and six eggs from the coop. After I washed them, I just stood and stared.

What on earth could I do with this?

Here’s the thing. Had I gone to the grocery store, it would have cost me $1.92 for the cucumbers, $.99 for the tomato, $2.96 for the squash and $2.13 for the six eggs.

The tomato and blueberries went into the freezer to be saved for making spaghetti sauce and blueberry muffins. The cucumber will go to work with me for lunch for the next couple of days. The eggs will feed me and my husband breakfast tomorrow. The yellow squash will be turned into a squash casserole for my husband. Oh, if you want a recipe, this one is beyond delicious. I add hamburger meat to make it into a meal.
